I'm really an addict when it comes to avocados. I'm sure I could eat avocado every day without even getting sick of it. I found out this great recipe which is easy to prepare, healthy and véry delicious. You can create these Avocado Eggs for lunch in only 30 minutes. What do you have to do? Here we go:

- 2 Avocados - 4 eggs - 1 diced tomato - A dash of Salt & Pepper
Preparation // What do you have to do?
1. Preheat the oven to 425 degrees (220 graden for the dutchies) 2. Slice the Avocados, erase the pits and scope out a bit of the avocado flesh (not too much, just enough for the egg to fill in) 3. Place the Avocados in a solid baking dish and crack an egg in each avocado half. 4. Add some salt and pepper and garnish them with the diced tomato 5. Place the avocados in the oven and bake them for about 20 minutes (you can take them out of the oven when the eggs are as you desired)
